Description

The determination of the fat content is of great importance for the food industry of dairy products. The fat content is used to determine whether a milk or cheese sample complies with the prescribed values. These values are used to classify the milk product for the manufacture of other products. The Mojonnier method, for example, is used to determine the fat content in milk and cheese. This method is a gravimetric method in which organic solvents are used for fat extraction. The solvent is then evaporated and the fat is determined by weighing the dry fat extract. Ideally, the Mojonnier flask is used for this method.
